The Science Behind the Flavor of Cheese Rosettes

Researchers at the ESPCI Paris, have recently found very interesting ways cheese rosettes are formed. They’re most interested, though, in the Swiss cheese known as Tête de Moine, or “monk’s head.” This one-of-a-kind cheese is meant to be enjoyed in the signature flower-shaped curls that brings out its signature flavor. Its unique and whimsical presentation has caught the imaginations of chefs and physicists.

Historically, the favorite way to serve Tête de Moine cheese is with a tool known as a girolle. This tool effortlessly carves up beautiful and tasty rosettes. We believe this technique not only protects the essence of the cheese but unlocks its fullest flavor potential. As Zhang points out, “I’m absolutely not somebody who is very specialized in cheese cutting,” yet his findings suggest that even simple changes in presentation can profoundly impact culinary enjoyment.

In a light-hearted moment, Zhang reflected on his personal cheese consumption, stating, “I used to like it, but since I ate a lot … I need to take a rest.” This short and sweet comment goes to show just how incredible Tête de Moine cheese can be. It makes the case for savoring it and doing so mindfully.
